1) Slice ginger into 1/2 inch pieces and peel the skin off using a knife. Use as much or as little as you like. I made a small batch so I used about 1/3 of a cup of chopped ginger.
2) Boil water In a saucepan, simmer the ginger chunks in 5 cups of water, for a minimum of 20 minutes, but the longer the better. We like to let ours simmer for 30-45 minutes.
3) Spoon out the ginger chunks and add tea bags. Lipton works great but any tea will be great!
4) If you like it sweet add the honey or sugar now.
5) While cooling, slice up some lemon and throw them in your decanter with some ice and about 1 cup of water.
6) Add your tea and throw it in the fridge! Enjoy!
